Nagai Seminar conducted TFT (TABLE FOR TWO) activities at the Hachioji Open Campus as part of a "joint project between the Tokyo Metropolitan Government and the University."Hachioji Campus

On Sunday, September 14, 2025, the seminar of Lisa Nagai, Senior Assistant Professor Department of Economics Faculty of Economics, offered a TFT *2 menu item, "French toast made with Oshima milk ice cream," at the Hachioji Open Campus as part of a "joint project between the Tokyo Metropolitan Government and the University" *1.
The joint project in which Nagai's seminar is participating, "Local Industry Creation Project Utilizing Idle Greenhouses - Passing on Oshima's Resources to the Next Generation," has been selected as a "Joint Project between Tokyo Metropolitan Government and Universities" for fiscal year 2025. The University of Electro-Communications is the representative of this joint project, with participation from Tokyo University of Agriculture and Technology, Tokyo University of Foreign Studies, and Nagai's seminar at our university. By utilizing idle greenhouses and combining advanced cultivation and digital technologies, the project aims to achieve stable production of fresh pepper, a high-value-added food ingredient. Furthermore, the project will promote the creation and branding of local industries by verifying farming models at shared farms and developing menus using Oshima's agricultural products.
Nagai's seminar worked on developing menus that utilize local specialties from Oshima, and this time they combined French toast made with Oshima Milk Ice Cream, which is rarely available outside of the island, with TFT, a core activity of the seminar, and sold 150 servings. Ota Yoshimasa (3rd year, Faculty of Economics) commented, "I was captivated by the deliciousness of Oshima Milk when I visited Oshima in the past, and wanted to offer a menu using Oshima Milk Ice Cream. I spoke directly with the producers and they agreed to cooperate with us. We received positive feedback not only from participants in the open campus but also from current students, and it was clear that our activities are gaining recognition. We would like to continue using Oshima's seasonal specialties to spread the word about its appeal."
Nagai's seminar will continue to work on promoting joint projects.
